Buffet Setup

I was just wondering how would we setup our buffet so that it will run smoothy. FH wants to have someone serve the food so that it will be less mess, so now I have to find volunteers

Hm not sure if your venue would work for this option but ours is set up in a T format. So you get plates in the middle at the intersection of the T and then two lines flow along the top of the T in opposite directions (ie: you get your plate and some people go to the right and others to the left) and then run down both sides of the vertical part. At the end is a carver doing beef.... Hope that makes sense
